Les Vins de Maxime is a wine activity by Maxime-François Laurent (son of Michèle Aubéry of Gramenon) in 2006, in parallel with the activity of the domain. It consists of a partnership with a neighboring winegrower whose vineyards cover about 6 hectares and are located in the communes of Montbrison-sur-Lez and Valréas. The plots and the work of the vineyard are followed throughout the year, the whole vineyard is cultivated without chemicals in the respect of the living.
The subsoil is clay-limestone and the location of the vines gives the wines a decidedly fruity and sunny note. The harvest is of course done manually in boxes, the grapes are sorted on the vine. Maxime François Laurent vinifies all the wines that come out under his label (buying only fresh grapes and not finished wines). The vinification is as natural as possible: no sulfur is added at vatting, indigenous yeasts do the fermentation, no fining or filtration, only a light sulfiting after the malolactic fermentation (2 g/hl).
