Sébastien Riffault is a rebellious winegrower from Sancerre. With his strong convictions for wine without artifice, he stands out in a rather classic or even conservative appellation … Let’s be clear, he is the only 100% natural winegrower in the area. The vineyard is worked according to the principles of biodynamics, zero chemistry, plowing on horseback, and the harvest is at full maturity (50% botrytis). In the cellar, he adds nothing and the wines are aged for several years (2 years in vat and 1 year in barrel). Atypical sauvignons very far from stereotypical, and that feels good!
