White Wine Vinification

A white wine is vinified from white grapes. Unlike red wine, the juice is not left to macerate with the pips and the skin (otherwise it gives orange wine, or also called skin contact). The juice is pressed directly so that it goes into alcoholic fermentation.

Note: There are also white wines vinified from black grapes with white flesh (the juice is also pressed directly), this is called a “blanc de noir”.

 

What is a Natural White Wine?

A natural white wine is a wine made from white grapes whose vine culture respects the principles of organic or biodynamic agriculture. During vinification no inputs were added, except sometimes a minimal dose of sulfur at bottling (< 40 mg/l total SO2).

Note: There is no official label certifying a natural wine. The definition is an agreement in principle between the actors of this movement, with a part of personal interpretation.

What is a Biodynamic White Wine?

A biodynamic white wine is a wine made from white grapes whose vine cultivation respects the principles of biodynamic agriculture (preparation of plant potions and monitoring of the lunar calendar). During vinification, few inputs are allowed, as well as a maximum sulfur dose of 90 mg/l total SO2.

Note: To be sure that a white wine is biodynamic, it must be certified by the Biodyvin or Demeter label.

What is an Organic White Wine?

An organic white wine is a wine made from white grapes whose vine cultivation respects the principles of organic farming. During vinification, a certain number of inputs respecting the specifications are authorized, as well as a dose of sulfur of maximum 200 mg/l total SO2.

Note: To be sure that a white wine is organic, it must be certified by the Agriculture Biologique label.

 

What are the Different Types of White Wine?

Depending on the level of residual sugar present in the bottle, there are 4 main types of white wine (dry, semi-sweet, sweet and very sweet). During an alcoholic fermentation, the yeasts transform the sugar into alcohol. Residual sugar is those which have not been transformed.

• Dry White Wine: 0 to 4 g of sugar per liter.

• Semi-Sweet White Wine:S4.1 to 12 g of sugar per liter.

• Sweet White Wine: 12.1 to 50 g of sugar per liter.

• Very Sweet White Wine: > 50 g of sugar per liter.

 

How to Recognize a Good White Wine?

This is a very hard question to answer… What is meant by good white wine? We all have different tastes… And then, a goog wine for a dessert, perhaps a very bad wine for an aperitif with friends… You must therefore choose your wine carefully according to the context in which it will be drunk. All we can tell you is that we have selected straight, flawless white wines that we have enjoyed drinking! These are just favorites! And in order to be sure not to mislead you of context, in each description, we indicate you the perfect conditions of tasting…!
